摘要
探讨蚕豆蛋白质提取影响因素,以单因素和正交试验确定最佳工艺条件。结果表明,蚕豆蛋白质的等电点PI为4.5,提取蚕豆中蛋白质最佳工艺条件为:温度40℃,提取时间2h,料液比1∶5,碱液浓度5×10-5mol/L。
The isoelectric point was measured, and the influential factor of extraction of the protein from the broad bean was studied. The optimum extraction conditions were confirmed by the mono-factor and the orthogonal experiment. The results showed the isoelectric point of broad bean protein was 4.5, the optimum extracting condition was: temperature of 40 ℃, time of 2 h, ratio of solid to liquid of 1:5, alkaline liquor concertration of 5× 10^-5 mol/L.
