摘要
我国水产加工业已发展成为一个包括渔业制冷和冷冻品、干制品、鱼糜及其制品、罐头、腌,品、鱼粉、鱼油、藻类食品、医药化工和保健品等系列产品的加工体系。2004年水产品加工企业达到8745家,年加工能力1427万t,水产品加工总量1032万t。高投入、设备新、管理规范的加工企业明显增多,一些供应出口的企业从硬件设施到软件管理已达到世界先进水平。企业质量安全意识明显改善,水产品质量安全水平明显提高,但也存在许多不足之处,如行业标准体系还不够完善和科学,水产品出口过分集中在日本、韩国、美国和欧盟这四大市场,精深加工水产品比率较小,产品技术含量低、加工废弃物综合利用水平不高,水产品质量安全问题较多,行业组织化程度缺乏力度,其内部管理协调机制不健全等,并对未来发展提出了几点建议。
Government at all levels and the fishery authorities have paid great attentions to the development of aquatic processing industry, which has made aquatic processing industry to be one of the three pillar industries in China's fish culture industry (the other two refer to fishing and aquaculture), The current processing industry of aquatic products has formed a integrated system including refrigeration, frozen products, surimi and surimi- based products, fish cans, fish meals, fish oil, algous food, pharmaceutical chemical products, functional products and etc. There are 8,745 processing companies in 2004 in China with the annual processing capability of 14,270,000 tons and annual output of 10,320,000 tons. More and more companies have had new equipments and standardized management through huge investment. Some exported-oriented companies have acquired world's leading facilities as well as management expertise. However, there are some problems such as lack of scientific industrial standardization, heavy market reliance on Japan, South Korea, USA and EU, small proportion of refined processed aquatic products, low technical content, low level in offal procession, security problems, weak industrial organization, imperfect internal coordination system and so on.. The current situation and main problem of Chinese aquatic products processing industry was introduced, and its several suggestions in future development was given in this paper.
