摘要 烟草类胡萝卜素对烟叶品质及可用性有重要的影响。简要介绍了烟草类胡萝卜素的分类、含量及生理作用;综述了烟叶成熟及调制过程中类胡萝卜素的变化、降解机理及降解产物,类胡萝卜素及其降解物对烟叶品质的影响,影响烟草类胡萝卜素及其降解物含量的因素及类胡萝卜素对降低卷烟焦油中自由基的影响。 Carotenoid significantly influences the quality and usability of tobacco.In this review the type,the content and the physiological effect of tobacco carotenoid were concisely introduced.The change of carotenoid in tobacco in the mature and tobacco curing progresshis was mainly focused.The carotenoid degrading biosyntheses was focused on.The degrading products on tobacco quality were also analyzed.The influent factors of the content of carotenoid and degrading products were analyzed.Carotenoid can reduce free radical in tar.
