有机肥和无机肥对茭白膳食纤维含量的影响 被引量:7

摘要 以茭白单季茭品种蒋墅茭和双季茭品种葑红早为试材,研究了有机肥和无机肥对不同规格肉质茎可食部分膳食纤维及其主要组分含量的影响。结果表明:茭白肉质茎可食部分的总膳食纤维及可溶性膳食纤维含量均较高,主要组分中纤维素和半纤维素所占比例较高,木质素和果胶的比例较低。施用有机肥能提高可食部分的可溶性膳食纤维含量,不同规格肉质茎间总膳食纤维含量的变幅较小;膳食纤维主要组分含量及其变化因品种不同而异。认为茭白肉质茎是一种优质的富含膳食纤维食品,有机肥对茭白产品中膳食纤维含量的稳定及其组分的改进具有积极作用。 Taking single-harvested cultivar' Jiangshujiao' and double-harvested cultivar' Fenghongzao' as experiment materials,this paper studies the effects of organic fertilizer and inorganic fertilizer on the dietary fiber(DF) and its main components in edible part of the gall of different sizes. Results showed that the contents of total dietary fiber(TDF) and its soluble dietary fiber(SDF) in edible part of the gall were rather high. Cellulose and semi-cellulose all have higher proportion than lignin and pectin observably in DF components. When organic fertilizer was used, the contents of SDF increased, while variation ranges of TDF decreased within the gall of different sizes, the contents and their variation of DF main components presented difference due to different cultivars. It is considered that the gall of Zizania latifolia is a kind of rich and high quality DF food. It can also stabilize the DF content of the gall and improve its quality when organic fertilizer was used.
