Isomaltulose Production by Biocatalysis Using Immobilized Cells

摘要 采用海藻酸钠固定化大黄欧文氏菌细胞生物催化蔗糖合成异麦芽酮糖,考察了固定化条件对转化过程的影响,确定了固定化优化条件为:海藻酸钠浓度为2%,细胞包埋量为20%,CaCl_2浓度为2%,固定化时间为12 h;利用该条件下的固定化菌体细胞催化初始浓度为550 g/L的蔗糖溶液,异麦芽酮糖平均转化率在80%以上,半衰期为40 d。 An effective method to produce isomaltulose from sucrose using Erwinia rhapontici cells immobilized in sodium alginate was described. The effect of immobilized conditions on sucrose conversion was investigated, and the results showed that the optimized immobilized conditions were as follows: sodium alginate concentration 2 %, the suspension of cells 20% (w/v), calcium chloride concentration 2 % and immobilized time 12 h. Sucrose with initial concentration of 550 g/L was converted to isomaltulose by the cells immobilized under the optimized conditions for many batches. The average conversion yield was above 80 % and the half-life was 40d.
