Application of Solid-state NMR on Studies of the Starch

摘要 综述了核磁共振(NMR)在乳制品定量分析、蛋白质与氨基酸构型测定,以及在食品无损检测方面的应用,详细论述了该技术在淀粉特性变化,尤其是在淀粉双螺旋结构定量研究中的应用,展望了固体NMR技术在淀粉结构研究中的应用前景。 The paper summarized the application of the NMR on quantitative analysis of dairy products, determination config-uration of protein and amino acid, and NDT (Non Destructive Testing) of food; and detailed the application of the NMR on modified starch, especially on quantitative analysis of double helix structure of the starch, and application prospects of the NMR technology on the structure studies of the starch were viewed.
