摘要
该研究探索通过电导率测定鉴别食用植物油掺入地沟油检测方法。通过对比地沟油、合格食用油、掺假食用植物油电导率方法,结果表明,地沟油经提取后水相平均电导率为100.7μs/cm,是菜籽油10倍,大豆色拉油10倍,芝麻油11倍。地沟油以不同质量分数掺入到菜籽油中,掺假量与电导率呈线性关系,且由单因素方差分析可知,掺假量对电导率影响显著;一元线性回归方程为Y=91.41X+12.49,R2=0.996,其结果差异有统计学意义(ρ<0.01)。电导率可用于地沟油掺入食用植物油鉴别检测。
To explore the identificating method of hogwash oil adulterated in edible oil through measuring electrical conductivity. Hogwash oil, qualified edible oil and adulterated oil were compared to find the characteristics of electrical conductivity. The mean aqueous phase electrical conductivity was 100.7μs/cm and was 10 times to the rapeseed oil, 10times to soybean salad oil, 11 times to sesame oil. Hogwash oils were adulterated in rapeseed oil in different percentages, single-factor variance analysis indicated that adulterated percentage was very significant to electrical conductivity and it showed .The linear regression plot was Y = 91.41X+ 12.49, R^2 = 0.996.The measurement results showed significant difference (ρ〈0.01). Electrical conductivity is a practicable simple method for edible oil adulteration identification.
