纯生啤酒泡沫稳定性影响因素分析

摘要 从泡沫成因,稳定机理及影响泡沫稳定性的物质来源和特性出发阐述酿造优良泡沫性能纯生啤酒的理论基础,提出改善泡沫稳定性的方法和应对泡沫稳定性衰减的策略。
