不同储藏方法对大米渡夏的安全性及品质变化研究 被引量:2

摘要 本研究采用常规储藏、密闭储藏、通风储藏、密闭辅助通风储藏四种储藏方法,在气温较高的季节入库,探讨不同储藏方法对大米渡夏的安全性及品质的影响。研究结果表明:密闭储藏法能使在气温较高季节中入库大米安全渡夏,并能较好地保持大米的新鲜度和蒸煮品质,对大米的粘度特性影响较小;密闭辅助通风法对大米的新鲜度,蒸煮品质和粘度特性影响较大,对气温较高的季节入库的大米,不宜采用该法渡夏。 In this research, four storage methods are used, which are normal storage, airtight storage,ventilation storage and airtight storage with the aid of ventilation, to store rice in the season of higher temperature. And the purpose of doing this is to study the influence of different storage methods on the safety and quality of rice in summer. As a result, it has shown that airtight storage method can make rice pass summer safely, which is kept in the storeroom during the season of higher temperature, and can be kept fresh and better quality in cooking; while the method of airtight storage with the aid of ventilation has a great influence on the freshness, quality in cooking and property of viscosity. And so, for the rice kept in the storeroom in the season of higher temperature, it is not suitable to store it by this method in summer.
