摘要
食用乳化剂和增溶剂是两类非常重要但又易混淆的食品添加剂。本文介绍了食用乳化剂和增溶剂的定义及其区别,论述了HLB值及其适用性,阐述了两者的作用机理。
Food emulsifying agent and solubilizer are the two kinds of very important but easily confused food additives. This paper introduced their definitions and differences, discussed the value of HLB and its adoptions, stated the function principles of emulsifying agent and solubilizer,and reviewed their applications in food industry.
