摘要 马铃薯价格低廉且营养丰富,其中含有多种生物活性物质,这些活性成分不仅能提高机体免疫力,还可预防并治疗糖尿病、癌症及心血管等疾病。以分子生物学为切入点,论述马铃薯中的酚类化合物、生物活性肽、α-茄碱、α-查茄碱和打碗花精几种天然生物活性成分,将有利于进一步研究开发马铃薯作为功能食品的潜在价值。 Potato(Solanum tuberosum) is cheap and nutritious. It contain a variety of bioactive substances, which protects against and possesses pronounced therapeutic effects in the treatment of diabetes, cancer and cardiovascular diseases. This report describes several active ingredients of potato, including phenols, bioactive peptide, α-solanine, α-chaconine and calystegine. The results of study suggest that potato is a promising source for the production of bioactive compounds as ingredients for developing functional foods.
