摘要
白栎是壳斗科(Fagaceae)栎属(Quercus)落叶树种,其果实营养丰富,是我国传统食品的原料之一。目前对白栎淀粉的加工技术研究较少,因此本文主要进行白栎淀粉提取工艺技术、栎粉保藏工艺技术以及栎粉豆腐加工技术的研究,探讨成本低、技术实用、产品质量较好的加工工艺,为进一步的开发利用和产业化提供参考。
Quercusfabri Hance is deciduous trees of species which belong to the family Fagaceae, Genus Quercus. Its fruits are often used to make different traditional foods known in China, Up to now,it is rarely reported that studies on technological process of starch of Quercus fabri. Because of this,we start with study on technological process of starch of Quercusfabri and it is successful. Based on the success of technology such as extracting starch, preservation of white oak starch and making white oak "Tofu" ,we research to find out a way which is more cheap,more practicable and better quality for new products of Quercus fabri starch. It is the necessary information for us to farther develop the wild resource of Quercus fabri starch in China.
