摘要
根据连续多天对鸡胸脯肉挥发性盐基氮和力学参数的测量结果,分析了挥发性盐基氮与鸡胸脯肉力学参数的相关性,发现回弹量和功耗比与挥发性盐基氮的相关性较大。通过分析各力学参数间的关系,建立了鸡肉的力学参数与其新鲜度的数学模型,为建立快速而准确地检验肉品新鲜度提供了一种简单有效的方法。
Based on the measurement results of total volatile basic nitrogen (TVBN) and the mechanical parameters of the chest chicken and their relativity was analyzed. It was found that the rebound extent and the work consumption of the testing chicken has relativity with TVBN. A mathematic model of the relationship of the freshness of chicken with its me-chanical parameters, which provided a simple and effective method for faster testing the freshness of such meat as chicken.
