摘要
实验研究5个品种的马铃薯块茎切面暴露于空气中褐变随时间的变化规律,建立5个品种马铃薯褐变随时间变化的一元二次回归方程.结果表明:切面暴露于空气中的时间与马铃薯的褐变强度具有相关性;时间对马铃薯的褐变具有极显著性影响(P<0.01),马铃薯的褐变强度随暴露于空气中的时间延长而增大;马铃薯的品种对其褐变具有极显著性影响(P<0.01).
The experiment on five varieties of potatoes was performed to investigate the time-variation pattern of browning of potato cutlet exposed to the air and a one-dimensional quadratic regress equation of time-variation was set up.The result showed that there was correlation of potato browning intensity with its exposing time in open air.The time had significant impact on the browning of potato（P 0.01）,the browning intensity of potatoes was increased as the exposure time extended,and the varieties of potatoes had significant impact on the browning（P0.01）,also.
