摘要
果胶酶能降解果胶物质,广泛应用于食品工业、纺织品加工和造纸工业等领域。果胶酶作为组分复杂的复合酶,筛选和酶活测定方法很多。文章对多种酶活测定方法的使用条件和特点进行了对比分析,为生产和使用果胶酶时选择合适简便、快捷灵敏和可信准确的分析方法提供帮助。
Pectinase can degrade pectin substances, and was widely used in food industry, textile processing and paper industry and other fields. As a component of pectinase is complex, and there are a lot of studies on its screening and enzyme activity detection. Several enzyme activity detections were compared in using conditions and characteristics. And it would offer the conferences for fast detection in pectinase production and using.
