摘要
微生物多糖是微生物在代谢过程中产生的对微生物具有保护作用的高聚化合物。研究发现,微生物多糖在许多工业领域如食品、医药、材料等都具有广泛的应用价值,显示出比动、植物多糖更为广阔的应用前景。本文对黄原胶、结冷胶、短梗霉多糖、凝胶多糖等几种重要的微生物多糖在食品工业中的应用作了综述性介绍。
Microbial polysaccharides produced in the process of microbial metabolism were high polymeric compounds which could protect microorganisms.Studies revealed that microbial polysaccharides had extensive application value in the industrial fields such as food, pharmaceutical, material industry, it showed more broad application prospects than animal and plant polysaccharide. This review introduced the properties of several important microbial polysaccharides and their application in food industry.
