摘要
综合了近年来国内外液态茶饮料加工技术的现状及研究进展。围绕液态茶饮料加工过程中原料选择、茶叶浸提、过滤、调配、包装和灭菌等工序对各个环节进行了详细的论述。讨论了液态茶饮料加工过程中存在的主要技术难题及相应的解决措施,并根据现状提出今后液态茶饮料加工的发展方向。
Status quo and research progress of tea liquid drink processing technology in China and abroad was comprehensively summed up. The technologies for choosing raw materials,tea extraction,clarification,flavoring,package and sterilization of tea liquid drink processing were discussed. Technical problems and solution measures in processing tea liquid drink were introduced,and the trend of tea liquid drink processing technology was described.
