不同大麦品种(系)营养功能成分差异比较 被引量:34

Determination of Functional Compositions in Different Barley Cultivars(lines) by Spectrophotometry

摘要 采用分光光度法测定了国内外63份大麦品种(系)籽粒及相应发芽大麦的总黄酮、γ-氨基丁酸(GABA)及抗性淀粉(RS)含量变化。结果表明:①不同大麦品种(系)未发芽及发芽处理后大麦总黄酮和GABA含量有差异,均表现为发芽>未发芽,多棱大麦>二棱大麦,裸大麦>皮大麦,紫色>黄色,其中发芽大麦总黄酮含量平均值(58.1±1.31 mg/100 g)高于发芽GABA总平均值(8.46±4.95 mg/100 g),变异系数分别为22.64%和58.52%,未发芽大麦黄酮含量平均值(52.1±0.90 mg/100 g)也高于GABA总平均值(7.10±4.24 mg/100 g),变异系数分别为17.29%和59.82%;②RS含量(%)呈现未发芽大麦(2.91±0.94)(发芽大麦(2.41±0.74),未发芽时,二棱大麦>多棱大麦,发芽后,多棱大麦>二棱大麦,其它均表现为皮大麦>裸大麦,黄色>紫色;③通过相关分析表明,大麦籽粒和相应发芽大麦的3个功能成分含量均表现出正显著相关,然而,在3个大麦功能成分之间,仅发芽GABA和发芽黄酮间在达到负显著相关,其它的相关系数均未达显著水平。 The General Flavones,GABA and Resistant starch contents of the 63 barley cultivars grains and malts from difference countries were determined by Spectrophotometry method.The results indicated :(i)The mean contents of the General Flavones and the GABA from barley grains and malts jointly showed the malts were higher than the contents of barley grains,the poly-rowed barley grains and malts were higher than the two-rowed ones,the hullless barley grains and malts were higher than the husky ones,and the purple barley grains and malts were higher than the yellow ones,while the mean contents of General Flavones(58.1±1.31mg/100g)were higher than GABA(8.46±4.95 mg/100g)in malts,its coefficient variation(c.v.) was 22.64 % and 58.52 %,respectively,and the mean General Flavones(52.1±0.90) were higher than GABA(7.10±4.25)in barley grains,its coefficient variation(c.v.) was 17.29 %and 59.82 %,respectively.(ii) The mean contents of RS(%)were shown the barley grains(2.91±0.94)were higher than the malts(2.40±0.74),the husky barley grains and malts were higher than the hulless ones,the yellow barley grains and malts were higher than the purple ones,and the two-rowed barley grains were higher than the poly-rowed barley ones in barley grains,the poly-rowed malts were higher than the two-rowed ones in the malts;(iii) Correlation analysis showed that there was significantly positive correlation between the three functional compositions content of the barley grains and its corresponding malts.However,correlation analysis in the General Flavones,GABA and RS were lower than significant level except significantly negative correlation between the General Flavones and GABA.
