摘要
用柠檬酸发酵后的废菌体作原料制备几丁质和壳聚糖。通过实验探讨最佳的工艺条件，用酸碱交替法脱蛋白质，在１００°Ｃ的条件下用５０％的浓碱液脱乙酰基，获得与进口壳聚糖品质相当的成品。
The preparation technology of chitosan f rom waste mycelia of Asper. niger by citric acid industrial fermentation was rep orted. The optimum condition, deacetylated under 100 °C and 50% alkaline sol ution to g et high quality chitosan was discussed, which could provide basis for industrial production of chitosan from waste mycelia.
