摘要
食物中的抗突变成分在预防和减少肿瘤形成中起着重要作用,本文系统地介绍了抗突变保健食品的评价方法,国内外研究中已检测出的食物抗突变成分及抗突变机理,目前研究中存在的问题,旨在为抗突变保健食品的开发和研制提供参考。
Dietary natural inhibitors of mutagenesis are particular important because they are useful for human cancer prevention and show no side effects on living organisms. In this article, recent studies on food antimutagenicity were reviewed; aspects to include have the evaluation systems of food antimutagenicity; inhibitors of mutagenesis in foods; possible mechanism and other problems.
