摘要
目的了解杭州市餐饮业食品索证现状,提出针对性监管措施,为食品安全决策提供参考。方法现场评估150家餐饮单位豆制品、粮油制品、酒类、食用农产品、调味品和食品添加剂等六大类食品的索证、台账登记情况。结果餐饮单位基本实现定点采购,索证制度总体落实较好,供应商资质证明索取率高,但检验合格证明索取率偏低且难度较大,餐饮业食品索证规范程度存在地区不平衡。结论餐饮业食品索证工作是一个系统工程,需要进一步加强宣传培训和日常监督,更需要对食品生产、流通环节经营单位的规范化管理才能实现。
Objective To understand the management situation of claiming for certificates in food and beverage service in Hangzhou,so as to advance corresponding countermeasures and provide information for government decision.Methods 150 food and beverage service units related to bean products,grain,oil,wine,edible farm products,spice and food additive were evaluated for claiming for certificates and registration records.Results Almost all food and beverage services have achieved designated procurement and the system of claiming for certificates was carried out.The rate of claiming for identity certificates was high and that of inspection certificates was low.It's various in different areas.Conclusion It is hard work for claiming for certificates in food procurement and food and beverage service industries.It is required to promoting propaganda,cultivation and normal inspection,as well as providing standard management to who product or sell food.
