摘要
以山东省珍稀地方名产珍珠油杏为试材,采用静态顶空-气相色谱-质谱联用技术对其果实的香气成分进行了分析。结果表明:珍珠油杏果实果肉挥发性成分为醇类、酯类、萜类、醛类、内酯类、酮类、烃类共7类22种化合物,主要为乙酸己酯、乙酸(Z)-3-己烯酯、乙酸(E)-2-己烯酯、β-紫罗兰酮(、E)-2-己烯醛、γ-癸内酯、6-甲基-5-庚烯-2-酮等,其总含量占测定物质总量的91.86%;酯类和萜类是其相对含量较高的成分,分别为82.50%和7.04%,二者也是种类数较多的挥发成分类别,分别为5种和7种;在检测到的醇类和醛类成分中,以C6醇[1-己醇(、E)-2-己烯醇]和C6醛[己醛(、E)-2-己烯醛]为主,而检测到的酯类成分全部为乙酸酯。
Zhenzhuyouxing apricot is rare local variety.The volatile compounds in its fruits were analyzed by static headspace-gas chromatography-mass spectrometry.The results showed that total 22 volatile compounds were isolated and identified,including alcohols,esters,terpenoids,aldehydes,lactones,ketones and hydrocarbons.Hexyl acetate,(Z)-3-hexenyl acetate,(E)-2-hexenyl acetate,β-ionone,(E)-2-hexenal,γ-decalactone and 6-methyl-5-hepten-2-one were the main compounds whose contents accounted for 91.86% of the total compounds.Esters and terpenoids had relatively higher contents as 82.50% and 7.04% respectively,and had 5 and 7 kinds of volatile compounds respectively.The main alcohols and aldehydes were C6 compounds,including 1-hexanol,(E)-2-hexenol,hexanal and(E)-2-hexenal.The detected esters were all acetate ones.
