摘要
采用水提醇沉法从生姜中提取水溶性粗多糖,通过正交试验确定了最佳提取条件为:提取温度90℃,提取时间2.5 h,料液比1∶15,在此条件下进过3次提取所得生姜粗多糖的平均提取率为7.58%。纯化后生姜多糖平均收率为5.97%。经过分离纯化后,IR光谱鉴定其结构基团,并鉴定了蛋白质、多酚、淀粉等物质。结果表明,用水提醇沉法提取的生姜多糖中不含蛋白、淀粉、多酚等杂质,产率高,值得推广。
The extraction,purification and identification of polysaccharide from ginger were studied.The polysaccharide was extracted with the method of water extraction and alcohol precipitation,the protein was dispelled with the sevage method and the content of protein,starch was measured.The results showed that with the other same conditions,when the temperature at 90 ℃,solid-liquid ratio of 1∶15,time of 2.5 h,the polysaccharide yield was up to 7.58%.There were no protein,starch and polyphenol in polysaccharide from ginger.The method of water extraction and alcohol precipitation was available for the utilization of ginger.
