摘要
对废弃的食用木瓜的木瓜籽进行加工研究,结果表明,干籽含油量为15%~30%,主要由油酸、棕榈酸、亚油酸、硬脂酸和亚麻酸5种脂肪酸组成,其中油酸含65%以上,类似于橄榄油和油茶籽油。通过溶剂提取的木瓜籽油,仍能保留浓郁的木瓜香味,具有类似于橄榄油和油茶籽油的品质,具有很好的经济价值。
Papaya seeds were processed.The result showed that the oil content of dry seeds was 15%~30%,which was composed of oleic acid,palmitic acid,linoleic acid,stearic acid and linolenic acid.The content of oleic acid was more than 65%,similar to olive oil and camellia oil.The papaya seed oil extracted by solvent remain papaya flavor and has good economic value.
