摘要
主要探讨了HACCP体系在湿法加工脱皮芝麻生产中的应用,并对湿法加工脱皮芝麻生产中的各个环节可能造成的物理危害、化学危害和生物危害进行分析,进而提出了关键控制点(CCP)、监控方式、纠偏措施、记录和验证方法,并且对湿法加工脱皮芝麻企业实施HACCP体系提出了一些可行性建议,进而发挥HACCP体系在食品企业生产管理中的作用,确保食品安全。
This paper mainly discussed the application of HACCP system in the production of peeling sesame by washing with water,and analyzed the hazard factors that would possibly affect the product quality during processing.The critical control point(CCP),monitoring methods,corrective actions,recording and verification methods were proposed.HACCP systems in food production management play a major role,Finally,to ensure that all food safety.
