摘要 主要介绍了冰温技术的起源、机理及发展历程,综述了冰温保鲜技术在果蔬保鲜上的应用状况及其应用中存在的优缺点,并对果蔬冰温保鲜技术的研究方向和发展前景做了展望。 Origin,mechanism and development history of controlled freezing point technology were introduced mainly in the article.Application status,advantage and disadvantage existed of controlled freezing point technology in fruit and vegetables storage were summarized.And research direction and development prospect of fruit and vegetables storage technology were looked into the distance.
