摘要
从汾酒大曲中分离出81株真菌,并对这81株菌进行了基于rDNA序列的分子生物学鉴定。结果表明,在汾酒大曲中分布有6个属的霉菌和4个属的酵母菌,其中扣囊腹膜孢酵母是优势酵母菌种,伞枝犁头霉和匍枝根霉是优势霉菌菌种。
Eighty-one fungal strains were isolated from Fen-Daqu and identified by sequence analysis of 26S rDNA and ITS regions. The results revealed that six genera of moulds and four genera of yeasts were found in Fen-Daqu. Saccharomycopsis fibuligera was the most common yeast, while Absidia corymbifera and Rhizopus stolonifer were the most common moulds encountered in Fen-Daqu.
