Strong Electrolytic Water and Its Application in Food Industry

摘要 强电解水具有特殊的理化和反应性能,既是一种绿色加工酸碱溶剂又是一种反应助剂,可广泛应用于食品加工的各个领域,如杀菌、酶钝化、活性物质萃取等。 Strong electrolytic water has specific physico-chemical and reaction properties.It is an acid-base solvent of green processing and also a reaction promoter,so it can be applied in many fields of food processing,such as sterilization,enzymatic inactivation,extraction of active substrate.
