摘要
海藻糖是由两个吡喃环葡萄糖分子以α-1,1糖苷键连接的非还原性双糖,广泛存在于细菌、真菌和动植物体内,因独特的生物学特性而成为研究和开发的热点。本文介绍了海藻糖的功能特性、生产制备、分离纯化方法及其应用研究概况。
Trehalose, which is non-reducing disaccharide consisting of two glucose molecules linked α -1,1, is widely present in bacteria, fungi, plants and animals. Due to its unique biological characteristic, it becomes a research hotspot. The functional properties of trehalose, production preparation, purification methods and its applications are described in this review.
