猴头菌在糖约为6%,NO.39%,pH为6的培养基中生长发酵较好。其总糖的以凹形曲线变化。而还原糖则逐渐减少。pH值逐渐减少到4左右。α-氨基氮在发酵2~3天达最高,为发酵初始的3~5倍。
Hericium erinaceus ferments favorably well in the culture medium of about 6% sugar, 0.39% N and pH 6, whose total sugar changing as a concave curve, reducing sugar decreasing gradually, pH value decreasing gradually to 4 and α-amino nitrogen reaches its peak after fermenting for 2~3days, which is 3~5 times of that at the beginning of fermentation.
