猴头菌在糖约为６％，ＮＯ．３９％，ｐＨ为６的培养基中生长发酵较好。其总糖的以凹形曲线变化。而还原糖则逐渐减少。ｐＨ值逐渐减少到４左右。α－氨基氮在发酵２～３天达最高，为发酵初始的３～５倍。
Hericium erinaceus ferments favorably well in the culture medium of about 6% sugar, 0.39% N and pH 6, whose total sugar changing as a concave curve, reducing sugar decreasing gradually, pH value decreasing gradually to 4 and α-amino nitrogen reaches its peak after fermenting for 2～３days, which is 3～５ times of that at the beginning of fermentation.
