摘要
饮用水感官评价是评价饮用水品质的一项重要手段,饮用水感官不仅是水质的综合反映,也是人类选择饮用水的重要影响因素,在生活饮用水品质提升和瓶装饮用水产品开发及改进中具有重要的意义。从影响因子、评价方法以及消费者的偏好3个维度对生活饮用水和瓶装饮用水感官评价的国内外研究现状进行了综述,并在此基础上对饮用水感官评价今后的研究进行了展望。
Sensory evaluation is a key index of drinking water quality,and directly affects the consumers’ preference.This review introduced the sensory methods of evaluating drinking water and the relevant items,analyzed how different trace substances contribute to the mouthfeel,and compared consumers’ preference of different water types.The article also briefly discuss the prospects of future research from the view of the water science workers and the bottled water enterprises.
