摘要
目的:鉴定从辣椒中提取、分离和纯化出的辛辣活性物质为何种成分组成。方法:对此辣椒辣素结晶进行NMR谱分析研究。结果:1H-NMR谱、13C-NMR谱、DEPT谱均出现了辣椒素及二氢辣椒素的化学位移值。结论:根据其NMR谱测定结果,可以推定:用此方法提取的结晶应是辣椒素和二氢辣椒素的混合物。
Objective : To verify the bitter active material isolated from the fruit of capsicum. Method: To analyze the spectrums ( 1 H - NMR, 13 C - NMR, DEPT) of the white crystal. Result : The spectrums ( 1 H - NMR, 13 C - NMR, DEPT) showed the chemical shift of capsaicin and dihydrocapsaicin. Conclusion: On the basis of the spectroscopic date ( 1H - NMR,13C - NMR,DEPT) ,the white crystal obtained by this way from the fruit of capsicum consists of capsaicin and di- hvdrocaDsaicin.
