摘要
以单螺杆挤压膨化机为试验设备对玉米蛋白粉进行膨化试验,运用二次通用旋转组合设计试验方法研究了玉米蛋白粉含水率、膨化机螺杆转速和机筒温度对加工后的玉米蛋白粉持水性的影响。结果表明:影响玉米蛋白粉持水性的主要因素是机筒温度,试验因素主次顺序依次为机筒温度、螺杆转速、物料含水率;较优组合为:物料含水率43%、螺杆转速334r/min、机筒温度157℃。
Extrusion experiment of corn protein powder was done with single screw extruder, the influence of moisture con- tent of corn protein, screw rotation speed and extruding cylinder temperature on water binding capacity of corn protein was studied by using the rotational composite design of quadratic regression. The results indicated that: Cylinder temperature was the main factor affecting water holding capacity of corn protein powder; the experimental factors of in priority order was as: ex-truding cylinder temperature, screw rotation speed and moisture content of corn protein. The optimized combination of factors was moisture content of corn protein of 43%, screw rotation speed of 334 r/min and extruding cylinder temperature of 157℃.
