摘要
聚合酶链式反应技术(PCR技术)能快速的研究传统发酵肉制品微生物物种的多样性,准确地获取复杂样品中微生物的消长规律而不需要进行微生物的传统培养,因此被广泛应用于各领域的研究。主要介绍了各种PCR-DGGE技术在发酵肉制品微生物方面的应用,并对其在云南传统火腿微生物中的研究应用做出展望。
The polymerase chain reaction technology (PCR technology) can be used to study micro- species diversity in traditional fermented meat rapidly, and the change regulation of microorganism can be accurately obtained from complex samples without traditional culture, and this method has been widely used in every field of research. All kinds of PCR - DGGE and its applications in food industry were introduced briefly in this paper.
