基于组合权重的物元分析模型及在猪肉品质评价中应用

摘要 随着人们生活水平的不断提高,猪肉作为人们餐桌上的常见食物之一,它的品质直接影响到人们的健康,因此对猪肉品质的质量综合评价显得尤为重要。根据消费者需求分析影响猪肉品质质量等级的主要因素,采用安全品质、食用品质、新鲜度和卫生品质构建猪肉品质的综合评价递阶层次结构。基于物元分析理论及其主要特点,本文运用对指标体系等级划分、隶属度确定、物元分析模型建立、关联函数值计算等步骤实现了猪肉品质等级的评价模型。以某市场采样的猪肉为实例进行评价,结果表明其猪肉品质总体处于良好状态与实际相符合。该评价方法实现对消费者关注的猪肉品质进行综合评价和对猪肉生产具有重要的指导意义。 With the continuous improvement of living standards, pork is one of common diet food, its quality directly affects people health,therefore the integration evaluation of pork quality grade is particularly important.According to consumer requirements, the main factors affecting pork quality grade were analyzed, the security quality and the edible quality and meat freshness and sanitation quality were introduced to establish the grade layer structure of integration evaluation of pork quality.According to matter element analysis theory and its main characteristics, the paper applied the grade classification of indicator system, membership confirmation, matter element analysis establishment and correlation function calculation to actualize the evaluation model of pork quality grade.The pork quality of certain market pork was evaluated as the fact examples,the results showed that the pork quality was in better condition and answered for the actual complexion;the evaluation method realized the integration evaluation of the pork quality of consumer attention and had important guidance significance to pork production process.
