摘要
壳聚糖、溶菌酶、海藻酸钠、乳酸链球菌素等天然保鲜剂具有无毒无味、可生物降解、生物相容性好、成本较低、保鲜效果显著等诸多优点,正日益成为对虾等水产品贮藏保鲜研究的热点。文章介绍了天然保鲜剂保鲜对虾的机理,综述了天然保鲜剂在对虾贮藏保鲜中的最新进展,分析了目前研究中存在的问题并对发展方向作出展望。
Natural antistaling agent, as chitosan, lysozyme, alginate, nisin etc, is non-toxic and odorless, biodegradable, biocompatible, low cost, excellent preservation effect, which is becoming a hot on preservation of fresh shrimp and other aquatic. The mechanism of natural antistaling agent for fresh shrimp was introduced. The applications of natural antistaling agent for the preservation of fresh shrimp were reviewed. In addition, some suggestions of the development were presented.
