摘要
食用油经过长时间高温加热后 ,不仅营养成份破坏 ,而且生成对健康有害物质 .本文报道了几种精炼油加热后的激光诱导荧光强度的变化与加热时间及温度的关系 .
The nutrition component was destroyed,and some harmful materials to human health were produced in long time and high temperature heated edible oil.The fluorescence induced by laser in heated oil has increased intensity with heating time and heating temperature.
