摘要 [目的]了解餐饮服务从业人员的食品安全知识知晓情况,评价开展从业人员食品安全知识培训的效果。[方法]2011年10月下旬至11月上旬,对诸城市所有餐饮服务从业人员进行食品安全知识集中培训。随机抽取其中100名于培训前后分别进行食品安全知识问卷调查。[结果]调查100名从业人员,食品安全法律、法规知识知晓率,培训前为45.50%,培训后为88.88%(P<0.01);操作规范和卫生管理知识知晓率,培训前为53.00%,培训后为83.22%(P<0.01);食物中毒预防及食品安全事故应急处置知识知晓率,培训前为50.00%,培训后为81.33%(P<0.01)。[结论]对餐饮服务从业人员进行食品安全知识集中培训效果明显。 [Objective]To understand the awareness on knowledge of catering workers for food safety,so as to evaluate the effect of food safety knowledge training. [Methods]Training of catering workers for food safety knowledge was con- ducted between late October and early November in Zhucheng city. A random questionnaire survey in a sample of 100 was conducted before and after training. [Results]After the training,the awareness rate of food safety laws and regulations in- creased from 45.50% to 88. 88% ( P 〈0.01) ;the awareness rate of operation rules and management knowledge increased from 53.00% to 83.22% ( P 〈0.01) ;the awareness rate of food poisoning prevention and emergency responses increased from 50.00% to 81.33% ( P 〈0.01). [Conclusion]Food safety knowledge training scores remarkable effect.
