红外光谱技术在中国酿酒行业中的应用研究进展 被引量:15

摘要 红外光谱法最主要的特点是快速分析、无损检测以及重现性好,因而在许多生产制造行业中得到了极为广泛的应用,近些年来,红外光谱法被引入到我国酿酒行业中,为酒体的品评以及对组分的定性与定量分析提供了一种快速、准确的分析手段。本文综述了红外光谱技术在国内酿酒行业当中的应用现状,其中涵盖了中红外、近红外两大技术分支分别在不同酒类的理化指标分析以及品质鉴定工作中的应用与研究情况,并对其应用前景做出了展望。 Infrared spectrometry has been extensively applied in many manufacturing industries for its main characteristics such as quick analysis, nondestructive testing and good repeatability. In recent years, the infrared spectrometry is introduced to the liquor-making industry, providing a fast tasting of component and the qualitative and quantitative analysis. In this paper, the development of application of infrared spectrometry in Chinese brewery manufactories was previewed, including the application of MIR and NIR in quantitative analysis and discriminant analysis of different kinds of liquors (or wines). Also, the application foreground was prospected.
