茶叶的深加工与综合利用是未来茶产业可持续发展的关键所在,茶制品的发展给整个茶行业带来了巨大的经济效益。目前茶制品主要形式为以茶饮料(茶汤)、调味茶饮料、复(混)茶饮料等茶品形式的茶饮料,以茶餐、茶味坚果、茶味糖果、茶味糕点等风味化的茶食品,以茶功能性成分如茶多酚、咖啡碱、茶氨酸等为主体的保健品,以茶味牙膏、茶枕、茶袜子等形式的日用品。随着现代食品加工技术的发展,茶资源的利用将更加充分、深入,茶制品将有以下三种发展趋势:一是可利用的茶树资源的丰富化;二是以茶叶功能性成分为主的保健品的开发;三是产品的多元化。
The further processing and comprehensive utilization is the key factor of sustainable development for tea industry in the future. The development of tea products brings considerable economic benefits to the whole tea industry. Nowadays the main categories of tea products include: tea beverage which contains tea drink (tea soup), flavored tea beverage, compound tea beverage and other kinds of tea drinks, flavored Tea Food such as tea meals, tea flavored nuts, tea flavored candy and tea flavored pastry, health care products with tea polyphenols, caffeine, theanine which extracted from tea leaves as functional ingredients, commodity like tea flavored toothpaste, tea pillow, tea socks and others. In summary, the tea resource will be used more widely and deeply with the development of the modern food process technology. In the future, there will be three kinds of trends of tea products: the first is the enrichment of the available tea tree resource; secondly, to exploit the health care products mainly containing the functional ingredient of tea; thirdly is the diversification of products.
