摘要 γ-氨基丁酸是一种天然存在的功能性氨基酸,具有调节血压、改善脑功能、促进精神安定、营养神经细胞等生理功能。该文概述了γ-氨基丁酸的功能性、检测方法及其在食品中的开发应用进展,展望其在乳制品中的应用前景。 γ-aminobutyric acid is a kind of natural functional amino acid which can regulate blood pressure, improve the function of brain, keep the spirit stable, provide nutrition for nerve cells. This study offered an introduction of 7-aminobutyric acid including the function, detection and the application in food industry of γ-aminobutyric acid. Finally, the application prospect of γ-aminobutyric acid in milk product was also discussed.
