摘要
鱼类肌肉中所含营养成分的特点是蛋白质含量高、脂肪含量低,还富含多种人体必需的氨基酸、不饱和脂肪酸、矿物质。叙述了鱼类肌肉中蛋白质(氨基酸)、脂肪、矿物质、维生素等营养元素对人体健康及功能的作用,研究结果表明,常食鱼肉对人体健康非常重要。
The nutritional components of fish muscles had the characteristics of high protein, low fat content a variety of essential amino acids for human, unsaturated fatty acids and minerals. The effects of protein (amino acids), fat, minerals, vitamin and other nutritional elements in fish muscles on human health and functions were expounded. The research results showed that it was very important for human health to often eat fish.
