摘要
文章综述国内外芝麻食品的研究现状,国外在传统芝麻食品的现代化改造、新型芝麻食品开发和芝麻食品安全营养评价方面都进行了系统研究,而中国芝麻食品研究仅集中于普通芝麻食品和功能性芝麻食品的开发上。通过分析芝麻食品的现状,推测芝麻食品将向传统芝麻食品的现代化;突出功能性、方便性;提高产品品质和安全性的方向发展。
Sesame food which is one of favorite food in China has a wide market prospect. To offer suggestions and guide on the develop- ment of Chinese sesame food, this paper reviewed research status of domestic and overseas sesame food. Overseas food researchers have conducted a systematic study on the traditional sesame food moderni- zation, new sesame food development and evaluation of sesame food safety and nutrition, domestic peer researched is mainly on develop- ments of common and functional sesame food. By means of analyzing the status of sesame food, it infered that the development directions of sesame food are modernizing the tradition sesame food, emphasi- zing the functionality and convenience, improving quality and safety.
