摘要
试验选择德宏水牛、摩拉水牛与德宏水牛杂交F1代(摩拉水牛♂×德宏水牛♀,简称摩德水牛)、尼里水牛与德宏水牛杂交F1代(尼里水牛♂×德宏水牛♀,简称尼德水牛)各5头,全放牧饲养,到平均月龄为35.8时进行屠宰,研究德宏水牛、摩德水牛、尼德水牛肌肉脂肪酸组成及氨基酸含量。结果显示:德宏水牛的饱和脂肪酸含量(44.33%)显著高于尼德水牛(41.39%)和摩德水牛(41.48%)(P<0.05),而尼德水牛和摩德水牛之间没有显著差异;尼德水牛和摩德水牛的多不饱和脂肪酸含量(分别为56.83%和56.83%)显著高于德宏水牛(53.90%)(P<0.05);德宏水牛的Σn-6∶Σn-3(4.25)显著高于尼德水牛(3.14)和摩德水牛(3.52)(P<0.05)。德宏水牛与摩德水牛、尼德水牛的肌肉氨基酸含量没有显著差异(P>0.05),但德宏水牛的酸性氨基酸含量均比其二者的高。
In this study,we had elected Dehong buffalo(D),F 1 hybrid of Dehong buffalo ♂ × Murrah buffalo ♀(MD) and F 1 hybrid of Dehong ♂ × Nili buffalo ♀(ND) as the experimental animal which was slaughtered with 35.8 month mean-age to research the fatty acid composition and amino acid content of beef in Dehong buffalo,MD buffalo and ND buffalo.The results showed that,saturated fatty acid content of Dehong buffalo(44.33%) was significantly higher than that of ND buffalo(41.39%) and MD buffalo(41.48%)(P〈0.05),there was no significant difference between the ND buffalo and MD buffalo(P〈0.05).The content of PUFA of Dehong buffalo(53.90%) was significantly lower than ND(56.83%) and MD(56.83%)(P〈0.05),however,the Σ n-6 ∶ Σ n-3(4.25) of Dehong buffalo was significantly higher than ND(3.14) and MD(3.52)(P〈0.05).Contents of amino acids in the muscle was no significant differences among Dehong buffalo,MD buffalo and ND buffalo(P〈0.05),but the acidic amino acid content of Dehong buffalo was higher than MD buffalo and ND buffalo.
