摘要
地方晒烟资源具有潜在的开发优势,研究中通过均匀设计的方法用湖南宁乡晒黄烟在卷烟配方中进行组配研究,并通过感官评吸的方法进行验证统计分析,为卷烟企业应用湖南宁乡晒黄烟提供参考。研究表明:①湖南宁乡晒黄烟掺配在混合型卷烟、烤烟型卷烟叶组配方中,都可以很好的提高香气丰满度,增加坚果香、奶甜香和烤面包香韵,并有一定生津的效果。②湖南宁乡晒黄烟在中式卷烟中的适量应用,在保持原有配方香气质、香气量不降低的基础上可以提高梗丝的利用率,提高量增加25%左右效果较佳。
Local varieties of sun cure tobacco are valuable resources with potential development advantage. The experiment was set up by uni- form design for formulation, and sensory evaluation was used to prove the formulation for providing a useful reference for cigarette production. The results showed that (i) when sun cure tobacco of Ningxiang from Hunan province was added into blend tape cigarette or virgin tape ciga- l~"tte, the flavor notes of nut, meet, and baking flavor could be increased. And it alse had effects on inducing saliva. (ii) When reasonable amount of the Ningxiang was used in Chinese style cigarette, the original flavor notes of quality and quantity was not only well kept, hut also the efficiency of cut stem could be increased, and the best effect was found in the mixing ratio of cut stem at 25 %. The results provided a good reference to tobacco enterprises for using sun cure tobacco of Ningxiang from Hunan province.
