摘要
对 30型滚筒连续杀青机的杀青温度和时间进行了研究。结果表明 ,杀青温度和时间对杀青叶品质有较大影响 ;在温度低于 16 0℃时杀青 ,随温度的升高 ,茶叶茶多酚和氨基酸含量增加 ,可溶性糖和叶绿素含量下降 ;随杀青时间的延长 ,氨基酸和可溶性糖含量呈上升趋势 ,而叶绿素和茶多酚则呈下降之势 ;当杀青温度超过16 0℃时 ,在任一时间内茶叶都会焦变。 30型滚筒连续杀青机杀青的适宜温度是 140℃ ,时间为 35~ 5 5s。
It was studied on fixation temperature and time of rotary continuous fixation machine model 30.The results showed that the quality of de-enzying leaf was affected by the temperature and time.Contents of polyphenol and amino acid increased,but soluble sugar and chlorophyll decreased with the rise of fixation temperature at the temperature of below 160℃.At the same time,contents of amino acid and soluble sugar raised,but polyphenol and chlorophyll dropped down with the rise of fixation time.Tea got burnt at the temperature of above 160℃.It was believed best technology that fresh leaf passed through the machine at 140℃ for 35~55s.
