摘要
糙米酵素是利用糙米、蜂蜜和玉米胚油等原料,经微生物发酵生成的混合生物酶体系,主要从糙米酵素的发酵工艺、营养价值及应用前景等方面对糙米酵素进行综述。
Brown rice enzyme is a kind of hybrid enzyme system made by microbial fermentation with brown rice, honey and corn germ oil as raw material. This paper mainly reviews on fermentation technology, nutritional value, applications and prospects of brown rice enzyme.
