摘要
针对生鲜产品在途质量控制难题,应用HACCP体系从事前、事中和事后三个阶段进行全过程控制,确定关键控制点并制定危害分析表单和实施计划表,以保障生鲜产品配送运输中的质量,同时将QFD运用到HACCP体系的预防措施和纠偏措施制定中,实现定性和定量相结合,解决主观性影响较强的问题。
For the problems of quality control of fresh products in transit, Using HACCP system achieves the whole process of quality control of fresh products in before, during and after the three dimensions, which determine the critical control points and formulate hazard analysis sheet and HACCP schedule. It guarantees the quality of fresh products in distribution. Meanwhile, the QFD is applied to lay down the preventive measures and corrective measures of HACCP system, to achieve the combination of qualitative and quantitative and reduces the subjective influence.
