摘要
通过分析食品中影响微生物生长的内在、外在因素,探讨了食品中微生物的来源及控制原则,并对近年来出现的食品微生物控制技术进行了总结,为相关研究提供参考。
The key internal and external factors which affected the microorganisms were stud ied and the source of microorganisms and the microbial control principles in food industry were explored. Then, the new technology of microbial control in food industry was summarized to pro- vide reference for the related research.
