海参营养标签参数的实验分析 被引量:4

摘要 海参有较高的营养价值,其体内含有多种有益于人体生理活动的营养物质,具备多种补益养生功能。为了确定海参营养标签参数的数值范围,本研究在实验室条件下测定了来源于不同地域海参的蛋白质、脂肪和钠等关键营养指标,以及水分和灰分等理化指标,综合分析了不同品种海参的能量、碳水化合物及核心营养素,为合理制定海参营养标签中的营养成分表提供参考数据。通过实验获得了不同品种海参的营养成分表,其中能量和3种典型核心营养素的平均值区间分别如下:能量为100~1 100 kJ/100 g,蛋白质为3.00~70.0 g/100 g,脂肪为0.3~2.1 g/100 g,钠为140~13 000 mg/100 g。本研究为企业制定海参营养标签和消费者选购海参提供参考。 Sea cucumber (Stichopus japonicus) has high nutritional value, and contains a variety of nutrients that are beneficial to human physiological activities. Sea cucumber has a variety of tonic health functions. In order to determine value range of nutrient parameters in sea cucumber, key nutrition indicators in sea cucumbers from different regions were determined in laboratory conditions, such as protein, fat, moisture, ash content and sodium. The energy, carbohydrate and core nutrients in different species of sea cucumber were also comprehensively analyzed in order to provide reasonable reference data for nutritional ingredients in sea cucumber nutrition labels. Nutritional ingredient la- bels in different varieties of sea cucumber were attained through experiments, including energy and typical core nutrients. The average intervals of these are respectively as follows : energy : 100 - 1 100 kJ/100 g, protein : 3.00 - 70.0 g/100 g, fat : 0.3 - 2.1 g/100 g, sodium : 140 - 13 000 rag/100 g. Value range of nutrient parameters was determined in laboratory conditions. This method has high accuracy, good reproducibility and is easy to operate, and it also has good economical and promotion value. [ Chinese Fishery Quality and Standards, 2014, 4( 1 ):53 -59 ]
